10 Minute Tailgate: Boston College

To me, ESPN Thursday night football belongs to Virginia Tech.  Thursday night games helped Tech establish their brand in the 90's and made Lane Stadium a feared place to play.  

Also, Thursday games usually. meant a visit from some of the elder Hokies in my family and putting on legendary tailgates.  Sometimes the menu doesn't have to be overly complicated, just delicious.  That's why I am showing you all one of my grandfather's tailgating staples, marinated pork loin strips.  

Also this week to tie into playing Boston College, the cocktail is an old Boston favorite, the Ward Eight. This cocktail mixes rye whiskey with some lemon and cherry flavors that are very pleasing to the pallet.

Marinated Pork Loin Strips

Ingredients:

2 Lbs of Pork loin or Pork Chops sliced into strips

1 Bottle of Dales Steak Marinade

8oz Sour Cream

2 Tbsp of Ground Horseradish

Dash of Dill Weed

 

Procedure:

Place sliced pork Strips into gallon ziplock bag with half of the Dales bottle.

Place in refrigerator and marinate for 30min to one hour. 

In medium bowl add sour cream, horseradish, and dill and stir to combine. 

Grill pork strips until pork hits 165 degrees internal temperature,

Remove from grill and serve with sour cream mix as a dip.

The Ward Eight

Ingredients:

2oz Rye Whiskey

½ oz Lemon Juice

½ oz Orange Juice

2 tsp Grenadine

Luxardo cherries for Garnish

 

Procedure:

In shaker, combine whiskey, juice and grenadine and shake.

Pour into cocktail glass and garnish with cherries

Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.


I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.


Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
