10 Minute Tailgate: Cal
Brunch: Cali Style B.A.L.T.s and Spiked Mimosas
If you're like me, you like to get to the lot early! Even though this is a night game, The menu today is a brunch treat for the early tailgaters like me to enjoy when you first arrive to the lot!
The B.A.L.T., or bacon, avocado, lettuce and tomato sandwich, is a common twist on a classic. I added California avocados and a scratch-made Lemon Garlic Aioli to provide a savory flavor profile that balances well with the umami provided by the bacon!
For the beverage this week, a spiked mimosa is on the menu. I added Cointreau orange liqueur to a traditional mimosa that takes a mild beverage and transforms it into a perfect way to kick off your tailgate! Enjoy!
The B.A.L.T.
Ingredients:
- 1 Loaf Sliced Sourdough Bread
- 1 Cup Dukes Mayo
- 1-1/2 Tbsp Minced Garlic
- 2 tsp Lemon Pepper
- 1 tsp Lemon Juice
- Arugula
- Sliced Tomatoes
- 1lb Bacon
- 1/2 Avocado per Sandwich
Procedure:
- Combine May, Garlic, Lemon Pepper, and Lemon Juice in Medium bowl; Spread onto 1 slice of bread
- Layer Avocado, Tomato, Bacon, and Arugula onto Second Slice of bread
- Top with 1st slice; Cut in Half and Enjoy!
Spiked Mimosa
Ingredients:
- .75 oz Cointreau (or Triple Sec)
- Prosecco or Champagne
- Orange Juice
- Ice
Procedure:
- Pour Cointreau into Glass over ice
- Fill with Desired amount of Prosecco leaving room for OJ
- Top with Orange Juice
- Stir and Enjoy
