It's Homecoming in Blacksburg!  Because it's a noon kickoff and there are so many events going on, I created an easy menu for this week.  To start, we have Mini Varsity Chili Dogs, paying homage to the Atlanta Landmark.  To wash it down, a tailgate staple, Jack and Coke. Enjoy and beat the Jackets!

Mini Chili Dogs

1 pack of All Beef Hot dogs

1 package Hot Dog Buns

1 can Hot Dog Chili

1 cup of Shredded Cheddar Cheese

½ medium Sweet onion diced

Procedure:

Cut Hot dogs in half and place in medium pot.  Cover with water and Bring to boil.  Let Boil for 2 Min and remove from Heat.

In Small Saucepan Heat Chili over Medium low stirring regularly.

Dice Onion and place in bowl.

Cut hot dog buns in half and set aside.

Place hot dog in bun, Spoon Chili over hot dog, sprinkle with Cheese and Onion

Jack and Coke

Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.

I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.

Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
