10 Minute Tailgate: Miami

This week the Hokies Travel down to Coral Gables to face Miami.  So for this week, I decided to create a sharable slider based on the cuban sandwich.  To pair with this, I put my own twist on a south Florida staple, the mojito.  The cuban sliders and watermelon mojito add a little tropical flare to your Hokie Tailgate.

Cuban Sliders

Ingredients:

1pkg Kings Hawaiian Dinner Rolls 

1 pkg Swiss Cheese

1 pkg of Sliced ham

1lb Pork Loin (sliced or chopped)

1 jar Sliced Pickles

2oz Mustard

2oz Mayo

½ stick of butter (Melted)

Procedure:

Preheat Oven to 350

Slice open entire flat of rolls and set top portion aside

On Bottom half, lay Swiss cheese across the bottom, followed by ham and pork loin

Layer two pickle slices over each individual roll

Combine mustard and Mayo in small bowl and spread across top half of rolls

Place top half of rolls on top 

Brush top of rolls with melted butter and place entire flat onto piece of foil and wrap in foil.

Place in Oven and heat 15-20 minutes

Remove and slice into individual Rolls

Serve and Enjoy!

Watermelon Mojito

Ingredients:

2oz Rum

Two Watermelon Chunks (No Seeds)

Mint Sprig

1 lime wedge

.5oz Lime Juice

.5oz Simple Syrup

Club soda

 

Procedure:

In bottom of glass, muddle two mint leaves, Lime Wedge and watermelon and fill with crushed Ice

In Mixing tin, mix rum, Lime Juice, simple syrup and shake to combine and pour over Ice

Fill with Club Soda and stir to Combine.

Garnish with mint sprig and serve.

Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.


I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.


Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
