10 Minute Tailgate: ODU

This week, the Hokies travel to Norfolk to face the ODU Monarchs.  Being that the game is in the 757, I've created a couple of recipes that tie into the coastal atmosphere of the tidewater area, and should make a delightful tailgating experience. 

The Old Bay crab dip is a staple of many Chesapeake Bay area restaurants, combining the unique flavor of Old Bay seasoning with the richness of lump crab meat, it's heavy enough to be a focal point of the menu, or an addition to a substantial tailgate lineup!

The Orange Crush is a 757 staple beverage.  It combines vodka and triple sec with orange juice and Sprite, to make a light and refreshing beverage for a hot coastal afternoon waiting for kickoff.

Old Bay Crab Dip

Ingredients:

1 cup mayonnaise

8oz softened cream cheese

2 teaspoons Old Bay 

1/2 teaspoon Ground Mustard 

1 pound lump crabmeat

1/3 cup shredded Cheddar cheese

I pkg of Pita Bread

 

Procedure:

Preheat Oven to 350 

In Bowl Combine Cream Cheese, Mayo, Old Bay and Mustard

Mix in Lump Crab Meat

Sprinkle Cream Cheese over Mix and store in Fridge if making in advance or place in oven until cheese melts 

While in Oven place pita bread in Microwave for 30 seconds

Remove and cut into wedges

 

Orange Crush

Ingredients:

3oz Fresh Squeezed OJ

1.5 oz Vodka or Orange Vodka

1.5oz Triple Sec

1oz Sprite

Crushed Ice

 

Procedure:

Combine OJ, Vodka, Triple Sec in shaker with Ice and shake to mix

Pour over Crushed Ice and Top with Sprite 

Garnish with Orange wedge

Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.


I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.


Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
