Crabcake Sliders and Rum Runners

As the Hokies prepare to kickoff against Old Dominion, I can't help but think about the cuisine of the coast.  So this week I made a crabcake recipe that is handheld, portable, and perfect for either a lunchtime snack or evening filler before the 7pm kickoff time.  These can be made ahead of time transported easily so you can bring a little of the 757 with you to Blacksburg.  

For the beverage, the rum runner, a beach staple.  THIS DRINK IS A HEAVY ONE.  Very tasty, however.  Maybe only enjoy one or two of these, especially if its a long tailgate!

LETS TURN THIS THING AROUND! GO HOKIES! 

Crabcake Sliders

Ingredients:

  • 1lb Chunk Crab meat
  • ½ cup Saltines, Crushed into fine crumbs
  • 1 egg
  • 6 tbsp Mayo
  • 1 tsp Mustard
  • 1 ½ tsp Parsley
  • 1tsp Old Bay
  • 1 tsp Lemon Juice
  • 1 tbsp salted butter
  • 1/2 tsp Salt and pepper
  • 1/2 Cup Tartar Sauce
  • 1 package Kings Hawaiian Dinner Rolls 12 Count

Procedure:

Mix Crab, Saltines, Egg, Mayo, Mustard, Parsley, Oldbay, Lemon Juice, Salt and Pepper into bowl and mix throughly. 

Shape into 1/2" patties  roughly 2" in Diameter. Melt Butter in pan on medium heat

Cook in pan until golden brown on both sides; remove from heat and set aside.

Slice the rolls in half through the center with out separating.  Spread Tartar Sauce on Top half of rolls.

Place crab cakes onto bottom half of rolls, place top half back on top, slice into individual sections, 

Serve right away or wrap in foil for transport. 

Rum Runner

Ingredients:

  • 1oz Light rum
  • 1oz Dark Rum
  • 1oz pineapple juice
  • 1oz orange juice
  • 1oz blackberry liqueur
  • 1oz banana liqueur
  • Splash grenadine
  • Ice
  • Dark Rum Floater 1/2 oz

Procedure:

In Shaker with Ice, Combine all ingredients and shake well.  Pour over ice and pour floater on top, garnish with Cherry and optional banana and Orange. 

OPTION:  Combine all ingredients in Blender with Ice and Blend  to make frozen version. 

Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.


I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.


Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
