10 Minute Tailgate: Rutgers

This week the Rutgers Scarlet Knights travel to Blacksburg to face the Hokies in Lane Stadium.  I have put together a menu this week that is perfect for a mid day tailgate!  for the main dish I created a twist on the old 'Pig in a Blanket" but substituted at Jersey staple... Taylor Ham... or Pork Roll, depending on what part of Jersey you hail from.  Any way you say it, this is an great recipe and a perfect handheld treat for your tailgate.  

The cocktail this week is the Bald Jack Rose.  It's made with Apple Brandy and lemon juice and dates back to the early 1920's.  Its light and tasty, tastes good up or on the rocks and is easy to make on site!

Pork Roll in a Blanket

Ingredients:

1 pkg of Pork roll or Taylor Ham

1 pkg of Provolone cheese

1 tube of Crescent Rolls

2oz Horseradish Mustard 

.5oz Honey

 

Procedure:

Open tube of Crescent rolls, unroll and separate into individual triangles 

Slice Pork Roll and cheese into strips of similar size approximately ½” wide

Layer one slice of Pork Roll and 2-3 slices of cheese and lay on top of triangle of dough at wider end 

Roll dough around meat and cheese and place on baking sheet

Bake according to package instructions 

While baking, mix mustard and honey in small bowl to use as dipping sauce. 

Serve on Platter with Dipping Sauce

Ingredients

2oz AppleJack (Apple Brandy)

.5oz Lemon Juice

Splash Grenadine

 

Procedure:

Combine in Mixer and shake with Ice

Granish glass with lemon and Pour 

Serve Straight Up

Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.


I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.


Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
