10 Minute Tailgate: Wofford

Beacon Burger Sliders and Blackberry Moonshine Smash

One of my favorite locations in South Carolina is the historic Beacon Drive-in in Spartanburg, South Carolina. Much like the Varsity in Atlanta, this place is full of its own unique flair and delicious food!  This week I am paying a little tribute to the Beacon by creating a handheld version of the classic Beacon burger topped with tomato, mustard, and slaw.  To pair with this, the Moonshine Blackberry Smash is light, fruity, and crisp and great for your tailgate before the 12 noon kick versus the Terriers. 

Beacon Burger Sliders

Ingredients:

  •  1 lb Hamburger
  • Seasoning of your Choice (I prefer Montreal Steak)
  • Sliced Cheddar cheese cut into quarters
  • 1 cup Coleslaw
  • Sliced Roma Tomatoes
  • Yellow Mustard
  • Kings Hawaiian Rolls

Procedure:

  • Roll Hamburger into 1oz balls; cook on grill to desired temp
  • Slice rolls in half
  • Load cheddar, Mustard, Tomato, and 1 tsp of slaw onto burgers; Place Tops of rolls back on top.
  • Enjoy right then, or wrap in foil and reheat later

Blackberry Moonshine Smash

Ingredients:

  • 1.5oz Moonshine
  • Fresh Blackberries
  • .75oz Blackberry liqueur
  • Optional  1oz. Simple Syrup
  • Club soda
  • Ice

Procedure:

  • In glass, Muddle 2-3 Blackberries
  • Add Moonshine and Blackberry Liqueur (and optional Simple Syrup)
  • Fill with Ice and top with Club Soda
  • Stir to combine and garnish with Blackberries
  • Enjoy
Hokie

I am a 5th Generation Hokie. I have Orange and Maroon blood coursing through my veins. I was lucky enough to attend VT from 1999-2003 and graduated with a history degree. I became a history teacher and football coach working my way to spending multiple seasons as Head Coach at schools in North Carolina and Colorado.


I now live in Colorado, with my wife and son and do what I can to follow the Hokies from afar. The outstanding team here at Sons of Saturday was gracious enough to let me talk some football and be able to impart some my knowledge gained from years spent on the sideline.


Aside from following the Hokies in all sports, I am a fan of the Carolina Panthers, Atlanta Braves, and Carolina Hurricanes. I also try to play a lot of golf and enjoy skiing out here in the rockies!
